Quinoa Fried Rice

- 2 Tablespoons Vegetable Oil
- 2 Pieces Eggs Whisked
- 1 Cup Mixed Vegetables
- 2 Tablespoons Onion Chopped
- 2 Teaspoons Garlic Chopped
- 1.5 Pounds Quinoa, cooked
- 1/4 Cup Escallion thinly, sliced
- 2 Tablespoons Soya Sauce
- 1 Packet MAGGI® Rice it Up Chinese Fried Rice Seasoning

Instructions
- 1.In a wok or a sauté pan heated ½ tbsp. oil over medium heat. Add eggs and cook until scrambled, stirring occasionally. Remove eggs and set aside.
- 2.In the same wok, add ½ tbsp. oil and heat over medium flame. Add mixed vegetables, onions and garlic. Sauté for 5 minutes or until onions are translucent. Increase heat to high and add remaining oil. Immediately add quinoa and green onions, soya sauce, MAGGI RICE IT UP, Chinese Rice Flavour, and stir until combined. Continue tossing quinoafor an additional 3 minutes. Add eggs and stir to combine.
- 3.Remove from heat and serve immediately.
