In a wok or a sauté pan heated ½ tbsp. oil over medium heat. Add eggs and cook until scrambled, stirring occasionally. Remove eggs and set aside.
In the same wok at 1 tbsp. oil and heat over medium heat. Add a mixed vegetable, onions and garlic. Sauté for 5 minutes or until onions are translucent. Increase heat to high and add remaining oil. Immediately add rice, quinoa and escallions, soy sauce, Chinese Fried Rice, Rice It Up and stir until combined. Continue tossing rice for an additional 3 minutes to fry rice. Add eggs and stir to combine.
Remove from heat and serve immediately.
