Maggi Rice It Up Rice and Peas
Ingredients

- 1 1/2 Cup Maggi Liquid Coconut Milk 1 1/2 cups
- 2 Cups Water
- 2 Cups Red Kidney Beans cooked, reserve 1/2 cup of liquid
- 1/4 Cup Onion chopped
- 1/4 Cup Escallion chopped
- 1 Teaspoon Pimento
- 2 Sprigs Thyme
- 2 Pieces Garlic
- 1 Piece Ginger crushed
- 1 Unit Scotch Bonnet whole
- 1 Packet MAGGI® Rice it Up Chinese Fried Rice Seasoning
- 3 Cups Rice
- 1/2 Tablespoon Unsalted Butter

Instructions
- 1.Add MAGGI LIQUID COCONUT MILK, reserved liquid from peas and water to a pot and allow to come to a boil.
- 2.Add peas, onion, scallion, pimento, thyme, garlic, ginger, pepper, allow to simmer. Add MAGGI CHINESE FRIED RICE IT UP to the pot along with the rice and butter.
- 3.Once liquid evaporates completely lower flame and cover with a tight lid.
- 4.Allow rice to cook for approximately 15 minutes or until tender.
