  • 2 Pounds Chicken parts
  • 2 Packs Maggi® Season-up! CHICKEN POWDERED SEASONING
  • 2 Tablespoons Green Seasoning
  • 1 Onion, diced
  • 1 Tablespoon Garlic, minced
  • 1 Tablespoon Vegetable Oil
  • 2 Tablespoons Brown Sugar
  • 2 Cups Rice
  • 1 Cup Pumpkin
  • 1 Medium Carrot, peeled and diced
  • 1 Tin Pigeon Peas, drained
  • 3 Cups Warm Water
  • 1 Pack Maggi Coconut Milk Powder Mix (50g)
  • 1 Scotch Bonnet Pepper


    1. Clean chicken and cut into small pieces. Season with Season Up, green seasoning, onion and garlic.

    2. Heat oil in a large pot, add brown sugar. When sugar has caramelized, add chicken and stir to coat completely with
      caramelized sugar.

    3. Cover and cook chicken on medium high heat for 10 minutes.

    4. Add rice, pumpkin, carrot and pigeon peas. Combine water and coconut milk powder and add to the pot. Top with hot pepper.

    5. Bring to a boil, cover pot tightly and reduce heat to low. Cook for 20 minutes.

    6. Remove hot pepper. Serve with Cole Slaw or Green Salad.
