In large sauce pan place water in pot along with pumpkin, onion, celery, carrots, garlic, ginger, thyme and scotch bonnet pepper. Bring to a boil. Simmer for 15 minutes or until pumpkin is cooked.

Carefully remove thyme sprig and scotch bonnet pepper. Using a hand held blender, puree liquid until smooth. Using a strainer, strain liquid.

Return to pot, add MAGGI PUMPKIN SOUP IT UP, stir until dissolved. Cook soup for 5 minutes.

Finish with MAGGI COCONUT MILK POWDER and cook for 5 minutes. Serve hot.
