- 1 Pack Mini Pasta Shells (200g)
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 2 Tablespoons Pimento/ Seasoning Peppers (finely minced)
- 1 Tablespoon Garlic (minced)
- 1/4 Cup Carrots (diced)
- 30 Grams All-Purpose Flour (2 tablespoons)
- 1 1/3 cup CARNATION® Full Cream Evaporated Milk (1 pack)
- 1 Cup Mozzarella Cheese (grated)
- 3/4 Cup Parmesan cheese (grated)
- 3/4 Cup Whole Kernel Corn (drained)
- 1/4 Cup Green Peas (frozen)
- 1/4 Cup Celery, Raw (minced)
- 1 Cup Cooked Bacon (diced)
- 4 Cups Panko Breadcrumbs
- 2 Cups All-Purpose Flour
- 2 Packets MAGGI® Season-Up All Purpose Powdered Seasoning
- 4 Cups Oil For Frying

Instructions
- 1.Cook mini shells/caracoles as per package instructions toss in olive oil and set aside.
- 2.In a medium pot heat butter until completely melted. Add pimento, seasoning peppers, garlic and carrots and cook until carrots are tender.
- 3.Add flour and stir to make a roux. Allow this mixture to cook for a minute
- 4.With a whisk, slowly pour Evaporated Milk into the pot, stirring continuously to ensure that this mixture becomes a smooth sauce.
- 5.Once finished lower heat and add ¼ cup mozzarella cheese, ¼ cup parmesan cheese, pasta, corn, peas, celery and bacon and stir until cheese is melted and peas is heated.
- 6.Set aside this mixture and allow to cool.
- 7.Fold in remaining cheese, place in the refrigerator and allow it to solidify.
- 8.In a bowl combine panko, flour and Season Up and mix until well incorporated. Set aside.
- 9.Heat oil to 350°F (180°C)
- 10.Take chilled mixture and create golf ball sized bites.
- 11.Coat them in the breadcrumb mixture, fry until golden brown.
- 12.Serve hot.
