  • 3 Units Ripe Plantains (approx.. 2 lbs.)
  • 1 Pound Minced Beef
  • 1/2 Cup Onion (chopped)
  • 1 Tablespoon Garlic (minced)
  • 2 Tablespoons Pimento/ Seasoning Peppers (finely chopped)
  • 2 Teaspoons Dried Oregano
  • 1 Packet MAGGI® Season-Up All Purpose (10g)
  • 1 Can Diced Tomatoes (14.5oz)
  • 3 Cubes MAGGI® Chicken Cubes (crumbled)
  • 1 1/2 Cup Cheddar Cheese (grated)
  • 4 Slices Cooked Bacon (finely chopped)

Instructions

  • 1.In a pre-heated oven 375 °F (190 °C), place whole plantains to bake for 30 minutes
  • 2.Season minced beef with, onions, garlic, pimento / seasoning peppers, oregano and Season Up. Let marinate.
  • 3.Remove plantains from oven, let cool and then cut each plantain in half lengthwise
  • 4.Starting at one end of each piece of plantain, slide your thumb between the peel and the plantain to loosen from peel (do not remove peel).
  • 5.Place plantain halved cut side up in a baking dish. Set aside.
  • 6.Cook seasoned minced beef on a medium high heat for 10 minutes or until meat is cooked
  • 7.Add diced tomatoes and Chicken Cubes. Cook for another 10 minutes until all of the liquid has evaporated
  • 8.Stir 3/4 cup of cheese and bacon into meat mixture.
  • 9.Spoon meat mixture over plantain halves and top with remaining cheese.
  • 10.Bake for 5 minutes until cheese has melted. Serve with side salad.
