Ingredients

Portions: 4

  • 2 Cups Cornstarch
  • 2 Teaspoons MAGGI® Season-Up Fish
  • 0.5 Pound Saltfish (rinsed and boiled to remove salt)
  • 2 Cups Vegetable Oil (for frying)
  • 1/2 Cup Pineapple (finely diced)
  • 1/4 Cup Red Onion (finely diced)
  • 1/4 Cup Sweet/Bell Pepper (finely diced)
  • 2 Leafs Basil (chiffonade)
  • 1 Tablespoon Lime Juice
  • 1/4 Cup Orange Juice
  • 2 Tablespoons Honey
  • 1 Tablespoon MAGGI® Pepper Sauce Hot N' Spicy
  • 1/2 Cube MAGGI® Onion and Garlic Cube (crushed)
  • 2 Tablespoons Olive Oil
  • 1/4 Cup Onion (finely diced)
  • 1/4 Cup Sweet/Bell Pepper (finely diced)
  • 1 Unit Garlic Clove (minced)
  • 1/4 Cup NESQUIK® Chocolate Flavoured Cereal
  • 2 Slices Cinnamon Raisin Bread (cut into small cubes)
  • 1/4 Cup Water
  • 1/2 Cup Green Peas
  • 2 Tablespoons Lemon Juice (to taste)
  • 1/2 Cube MAGGI® Onion and Garlic Cube (crushed)

Instructions

Fried Saltfish:

  • 1.In a small bowl, combine 2 cups cornstarch and 2 teaspoons MAGGI® Season Up Fish
  • 2.Add saltfish fillets to the seasoned cornstarch, coating very well. Set aside
  • 3.Heat oil to 350˚F (180˚C) Fry saltfish until light brown and crisp. Set aside.

Pineapple Salsa

  • 4.In a small bowl, combine ½ cup pineapple,¼ cup onion, ¼ cup bell peppers, basil leaves, lime juice, orange juice, honey, 1 tablespoon MAGGI® Pepper Sauce Scotch Bonnet / Hot & Spicy
  • 5.½ MAGGI® Onion & Garlic Cube and allow to marinate. Set aside.

Chocolate Infused Cinnamon Raisin Stuffing Cake:

  • 6.Preheat oven to 350˚F (180˚C). Lightly grease a small baking dish and set aside.
  • 7.In a medium sauté pan heat 2 tablespoons olive oil, sauté ¼ cup onion, ¼ cup bell pepper and 1 clove garlic until fragrant.
  • 8.Add ¼ cup NESQUIK® Cereal, cinnamon raisin bread and ¼ cup water and cook for 3 minutes
  • 9.Spread mixture on prepared baking dish and bake for 10 minutes or until firm
  • 10.Remove from the oven and allow to cool for 10 minutes, then cut in rounds with a cookie cutter. Set aside.

Green Pea Puree:

  • 11.Bring a pot of water to a boil, add the peas and simmer for approximately 3-5 minutes. (Alternatively, you can steam the peas) Drain.
  • 12.Add the peas to a blender/food processor and blend until smooth.
  • 13.Add lemon juice and MAGGI® Onion & Garlic Cube to taste. Serve with fried saltfish, pineapple salsa and stuffing cake.
