  • 1.5 Pounds Mahi Mahi (fillets, washed with MAGGI® Citrus Wash)
  • 3 Teaspoons MAGGI® Season-Up Fish
  • 4 Tablespoons MAGGI® Green Seasoning Citrus
  • 4 Tablespoons Coconut Oil
  • 1 1/2 Teaspoon Garlic (minced)
  • 1 1/2 Teaspoon Ginger (minced)
  • 1 Teaspoon Turmeric Powder
  • 1 Teaspoon Ground Geera/Cumin
  • 1 Teaspoon Ground Coriander
  • 5 Cubes MAGGI® Onion and Garlic Cubes
  • 4 Units Banana Leaves (singed)

Instructions

  • 1.In a bowl combine fish, Season Up and Green Seasoning ensuring all parts of the fish are well seasoned. Set aside.
  • 2.In large bowl, mix coconut oil, garlic, ginger, turmeric, geera, coriander, Cubes until it makes a cohesive paste. Add the fish pieces to this mixture and coat thoroughly.
  • 3.On an open flame, singe banana leaves to make them more pliable.
  • 4.Place each fish fillet onto a banana leave and fold to secure.
  • 5.Heat a large non-stick pan and place fish folded side down into the pan. Cook for 3 minutes on each side, flipping occasionally to ensure fish is cooked thoroughly.
  • 6.Serve hot, in banana leaves.
