In a pre-heated oven 375 °F (190 °C), place whole plantains to bake for 30 minutes

Season minced beef with, onions, garlic, pimento / seasoning peppers, oregano and Season Up. Let marinate.

Remove plantains from oven, let cool and then cut each plantain in half lengthwise

Starting at one end of each piece of plantain, slide your thumb between the peel and the plantain to loosen from peel (do not remove peel).

Place plantain halved cut side up in a baking dish. Set aside.

Cook seasoned minced beef on a medium high heat for 10 minutes or until meat is cooked

Add diced tomatoes and Chicken Cubes. Cook for another 10 minutes until all of the liquid has evaporated

Stir 3/4 cup of cheese and bacon into meat mixture.

Spoon meat mixture over plantain halves and top with remaining cheese.

Bake for 5 minutes until cheese has melted. Serve with side salad.
