  • 1 Pound Pumpkin (skin removed and cut into large cubes)
  • 1 Pound Brussels Sprouts (cut in half and washed)
  • 3 Cubes MAGGI® Onion and Garlic Cubes
  • 3 Tablespoons Vegetable Oil
  • 1/2 Cup Olive Oil
  • 1/2 Cup Balsamic Vinegar
  • 2 Tablespoons Honey
  • 2 Tablespoons Dijon Mustard
  • 1 Teaspoon MAGGI® Season-Up All Purpose (to taste)
  • 1 Pack Baby Spinach Leaves (or mixed greens of choice)
  • 1/2 Cup Feta Cheese
  • 1/4 Cup Roasted Pumpkin Seeds
  • 1/2 Cup Dried Cranberries

Instructions

  • 1.In a baking tray lined with foil and lightly greased,, season the pumpkin and Brussel sprouts with crushed MAGGI® Onion and Garlic Cubes and vegetable oil.
  • 2.Roast for 10 minutes at 400°F (205°C) until veggies are slightly charred and cooked through. Set aside to cool completely.
  • 3.In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard until they emulsify. Season with MAGGI® Season Up All Purpose to taste. Set aside.
  • 4.To a serving bowl/platter, add baby spinach and drizzle with some of the prepared dressing.
  • 5.Top with roasted pumpkin & Brussels sprouts, feta cheese, toasted pumpkin seeds, dried cranberries, and another drizzle of dressing.
  • 6.Serve immediately, with additional dressing on the side.
