In a non-stick frying pan, melt 1 tablespoon butter. Sauté onions until translucent, then add scallions and ham. Cook for 3 minutes stirring occasionally.
In a mixing bowl, toss together bread, parsley, sautéed onion mixture and 1 ½ cups of cheese. Whisk together in a separate bowl OMEGA Milk, eggs and MAGGI Naturisimo. Pour over bread mixture and combine well.
In a greased 9 inch bake dish greased with pan spray, pour mixture and spread evenly. Mixture can be made a day ahead and kept in the refrigerator. Sprinkle remaining cheese on the top of bread pudding mixture
Preheat the oven at 350 degrees F. Cover with foil. Bake for approximately 20 minutes. Uncover and bake for a further 30 minutes or until puffed and golden brown. Cut into 8 slices and serve.
