Ingredients

- 1 Pound Potatoes (peeled and quartered)
- 2 Tablespoons MAGGI® Season-Up All Purpose Powdered Seasoning
- 3 Tablespoons Unsalted Butter
- 1 large Egg Yolk
- 1/2 Cup Shredded Cheddar Cheese
- 1/2 quart Ham
- 1 Tablespoon Chive/Escallion (finely chopped)
- 1 Cup Breadcrumbs
- 1 Cup All-Purpose Flour
- 2 Large Eggs
- 1/2 Cup CARNATION® Full Cream Evaporated Milk
- 3 Cups Vegetable Oil

Instructions
- 1.In a medium pot over high heat, cook the potatoes in salted water until soft. Drain and press through a ricer until smooth.
- 2.In a medium-sized mixing bowl, add the mashed potatoes, 1 tablespoon MAGGI® All Purpose Seasoning, unsalted butter and egg yolk. Mix until all ingredients are well combined. Let the mixture cool for 5 minutes.
- 3.Fold in the chopped ham, cheddar cheese and chopped chive. Taste for seasoning and adjust as needed.
- 4.Roll the mixtures into 1-ounce balls and set aside for breading.
- 5.Set fryer to 325°F (163°C)
- 6.In a bowl, season the flour with the remaining MAGGI® All Purpose Seasoning. In another bowl, whisk together the eggs and CARNATION® Full Cream Evaporated Milk. And finally add breadcrumbs to a separate bowl.
- 7.Begin your breading process by dipping each croquette into the seasoned flour, then the egg mixture, and last the breadcrumbs. Ensure each croquette is coated evenly through each step and place on a sheet tray until ready to fry.
- 8.Fry for 2-3 minutes or until golden brown and place on a paper towel to absorb any excess oil from the fryer.
