In a sauté pan, heat 1 tbsp. vegetable oil over medium heat. Sauté escallion, onions and scotch bonnet pepper until onions are translucent. Remove from heat and allow to cool.
In a mixing bowl, combine flour, cornmeal and baking powder. Add corn and water to make a pourable batter. Season batter with MAGGI ALL PURPOSE SEASONING.
In a deep frying pan, fill oil half way up the pan, heat oil over medium heat. Once oil is hot, use a tablespoon to pour batter into hot oil. Work in small batches to ensure oil temperature remains hot.
Fry until golden brown on both sides. Transfer to a baking tray lined with absorbent paper to drain excess oil.
For Curry Dip: In a mixing bowl combine all ingredients. Serve with Corn Fritters.
