Add flour, salt and baking powder to a large bowl.
Add Sweetened Condensed Milk, eggs, assorted fruit, butter, grated coconut, Evaporated Milk and vanilla extract/essence until well combined.
Pour into greased loaf pans (There should be enough batter to fill two 3”x 6” loaf pans).
Bake in preheated oven at 350°F (180 °C) for 30 – 40 minutes.
