Rice Cake

  • 1½ cups all purpose flour
  • 1 cup rice flour
  • 2 tsps. baking powder
  • ½ tsp. salt
  • 3 eggs
  • 1 ½ cups of sugar
  • 2 tsps. of grated lemon rinds
  • 1 tsp. vanilla essence
  • ½ cup CARNATION Evaporated Milk, diluted in ½ cup water
  • ½ cup vegetable oil
  • 1 cup raisins
  • 1 cup chopped Maraschino cherries (optional)
  • 1 can (405g) NESTLE Sweetened Condensed Milk, boiled in can for 2 hours


  1. Whisk eggs and sugar until they double their volume, add grated lemon rinds and vanilla essence, set aside.

  2. Sift flours, baking powder, and salt, set aside.

  3. In another bowl, combine CARNATION Evaporated Milk and oil, set aside.

  4. Mix dry ingredients with mixture of eggs and sugar alternatively until you obtain a soft dough.

  5. Pour in a baking pan previously greased and floured, and bake in preheated oven at 350ºF (180˚C) for 45 minutes or until toothpick comes out clean

  6. Remove from the oven, put out from pan, let it cool, and serve with Sweetened Condensed Milk.
