Ingredients

- 1 Medium Onion (diced)
- 1 Pound Pumpkin (finely diced)
- 2 Tablespoons Pimento/ Seasoning Peppers (finely diced)
- 1 Tablespoon Margarine (or butter)
- 2 1/2 Cups Rice
- 4 Cubes MAGGI® Vegetable Flavoured Seasoning Cubes
- 4 Cups Water

Instructions
- 1.Fry onions, squash and pimento/seasoning peppers in margarine until onions are translucent.
- 2.Add rice and Cubes and sauté until well incorporated.
- 3.Add water and bring to a boil. Reduce heat to a simmer and cover pot. Cook for 25 minutes.
- 4.Remove from heat and let stand for 5 minutes. Fluff with fork and serve hot.
