  • 3 Pounds Boneless Beef Chunks (chuck, etc)
  • 2 Tablespoons MAGGI ® Unique Beef Seasoning
  • 1/4 Cup Green Seasoning
  • 1 Teaspoon Black Pepper
  • 2 Tablespoons Pimento/ Seasoning Peppers (chopped)
  • 1 large Onion (chopped)
  • 1 Tablespoon Garlic (minced)
  • 1 Tablespoon Vegetable Oil
  • 2 Tablespoons Brown Sugar
  • 2 Cups Water (or enough to just cover the beef)
  • 2 Cubes MAGGI® Onion and Garlic Cubes
  • 2 Large Tomatoes (quartered)
  • 1 large Sweet Pepper (cut into strips)
  • 2 Tablespoons Margarine
  • 1 1/2 Cup Shredded Cheddar Cheese
  • 12 Units Flour Tortillas
  • 3/4 Cup Salsa
  • 3/4 Cup Sour Cream
  • 3/4 Cup Pickled Red Onions

Instructions

  • 1.Over medium heat, heat oil and caramelize brown sugar, as you would do for stew.
  • 2.In a pressure cooker, heat oil and caramelize brown sugar, as you would do for stew.
  • 3.Brown beef on all sides and leave to cook covered for 5 minutes.
  • 4.Add water, MAGGI® Onion & Garlic Cubes and tomatoes and pressure-cook the beef for 15-20 minutes depending on cut of meat. Until tender.
  • 5.Remove from pressure cooker, shred and set aside. (Save the broth if desired to make a gravy/jus)
  • 6.In a medium non-stick skillet, add sweet peppers and shredded beef, cook until the sweet peppers have softened and set aside.
  • 7.In a clean, non-stick skillet, over low heat, add 1 tbsp margarine and melt. Add a tortilla, top with 1/6th of the shredded beef mixture, cheddar cheese and top with another tortilla. Flip and toast the other side until light brown and remove from the heat.
  • 8.Cut into wedges and serve hot with salsa, sour cream and pickled onions (or toppings of choice)
  • 9.Repeat with the remaining tortillas and shredded beef.
