Ingredients

- 3 Mediums Ripe Bananas
- 1 Piece Eggs beaten
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Vanilla Essence
- 2 Cups All-Purpose Flour
- 1 Teaspoon Cinnamon Powder
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt, Table
- 1/2 Cup CARNATION® Full Cream Evaporated Milk
- 1/4 Cup Oil For Frying

Instructions
- 1.In mixing bowl, using potato masher or fork to mash bananas. Add eggs, sugar and vanilla.
- 2.In a separate bowl, combine flour, baking powder, salt and cinnamon.
- 3.Add banana mixture to flour mixture, then stir in NESTLE CARNATION Evaporated Milk.
- 4.In frying pan, place oil to cover the base of pan. Heat oil over medium heat until ripples begin to form.
- 5.Using a 2 ounce ice-cream scoop, pour fritter batter carefully in oil. Evenly space fritters, do not over crowd pan. Fry on both sides until golden brown. Transfer to a surface lined with absorbent paper to drain excess oil. Makes about 12 fritters. Recipe serves 6 persons.
