  • 8 green pods, Cardamom, lightly crushed
  • 1 Teaspoon Spices, Cardamom powder
  • 6 Tablespoons Brown Sugar
  • 2 Teaspoons Pistachios, chopped
  • 8 Grams Nuts, Almonds
  • 7 1/2 Cups NESTLÉ 100% Full Cream Cow's Milk
  • 4 Tablespoons Vinegar
  • 4 Tablespoons Water
  • 5 Cups Water
  • 1 Cup Brown Sugar
  • 6 Cups NESTLÉ 100% Full Cream Cow's Milk
  • 7 Tablespoons Nestle® KLIM® Fortificada
  • 4 Tablespoons Nestle® KLIM® Fortificada

Instructions

Start Rabri (Milk Syrup)

  • 1.Put milk in a bowl and incorporate KLIM® Fortificada Milk Powder into it. Pour this into a pot. Add saffron, cardamom pods, cardamom powder and sugar. Place on low heat to simmer and reduce.

Make Paneel (Chenna)

  • 2.In another bowl, mix KLIM® Fortificada Milk Powder into measured milk and then heat to boil. Add vinegar and water mixture until the milk curdles. Strain through cheesecloth, rinse and let drain for 20 minutes.

Knead Paneer & Shape Discs

  • 3.Transfer drained chenna and knead until smooth (approximately 5 minutes). Roll into a log, cut into 15-16 pieces, shape into small balls and then flatten slightly into discs.

Prepare Sugar Syrup & Cook Discs

  • 4.While kneading, set sugar syrup on low heat to dissolve. Once discs are shaped, place them gently into simmering syrup. Cook for 5 minutes per side and then cover for another 5 minutes until they double in size. Remove from heat, let them rest and allow to cool in the syrup.

Assemble Final Rasmalai

  • 5.Gently squeeze excess syrup from discs. Place discs into a wide dish and pour over half of the reduced milk syrup. Cover and refrigerate overnight (or at least for 5 hours). Before serving, drizzle with the thickened remaining syrup and garnish with pistachios, almonds and saffron.
