Ingredients

  • 4 Cups All-Purpose Flour
  • 1 Teaspoon Salt
  • 2 Tablespoons Baking Powder
  • 1 Cup NESTLÉ® Sweetened Condensed Milk
  • 2 Large Eggs (slightly beaten)
  • 1 Cup Assorted dried fruit (cherries, paw paw/papaya, raisins, currants etc)
  • 1 Cup Butter (melted)
  • 1 Cup Coconut (grated)
  • 1 Cup CARNATION® Full Cream Evaporated Milk
  • 1 Teaspoon Vanilla Extract (or vanilla essence)

Instructions

  • 1.  Add flour, salt and baking powder to a large bowl.
  • 2.  Add Sweetened Condensed Milk, eggs, assorted fruit, butter, grated coconut, Evaporated Milk and vanilla extract/essence until well combined.
  • 3.  Pour into greased loaf pans (There should be enough batter to fill two 3”x 6” loaf pans).
  • 4.  Bake in preheated oven at 350°F (180 °C) for 30 – 40 minutes.
