Preheat the oven to 350°F (180°C). Grease 2 9×5” and line with grease-proof paper.
Cream butter and sugar, by hand or using an electric mixer, until light and fluffy. Add Sweetened Condensed Milk and mix on low speed.
Add browning, vanilla, and eggs one at a time and mix on low until combined well.
In a separate bowl, combine all dry ingredients - flour, baking powder, salt, and mixed spices for baking.
Add dry ingredients in three parts alternating with one and a half cup of the red label wine. Fold in mixed fruits and pour batter equally into the prepared baking pans
Bake for 1 hour or until the knife comes out clean when placed in the centre. Add remaining 1 cup of red wine over the cake once finished and allow to rest.
