Ingredients

  • 1 Cup Pineapple (cut into chunks)
  • 1 Cup Apple (cut into chunks)
  • 1/4 Cup Brown Sugar
  • 1 Tablespoon Lemon Juice
  • 3 Mediums Ripe Bananas (mashed)
  • 2 Tablespoons Brown Sugar
  • 1/4 Cup NESTLÉ 100% Full Cream Milk
  • 1 Teaspoon Vanilla Extract (or vanilla essence)
  • 1 1/2 Cup All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Cinnamon Powder
  • 1/4 Teaspoon Nutmeg Powder
  • 1/4 Cup Vegetable Oil (for frying)

Instructions

Pineapple & Apple Compote:

  • 1.In a sauce pot add pineapple, apple, ¼ cup brown sugar and 1 tablespoon lemon juice.
  • 2.Cook on low heat until fruits have softened and have made a delicious syrup. Set aside.

Banana Fritters:

  • 3.In a large bowl, mash bananas. Add 2 tablespoons brown sugar, ¼ cup NESTLÉ® 100% Full Cream Milk, vanilla extract/essence, flour, baking powder, ¼ teaspoon cinnamon powder and ¼ teaspoon nutmeg powder mix until well incorporated, cover and set aside.
  • 4.Fill a frying pan ¼ inch high with vegetable oil. Heat over medium high heat.
  • 5.Spoon prepared batter into the hot oil and fry until golden brown on both sides.
  • 6.Drain on a paper towel lined plate to remove excess oil and serve hot with pineapple and apple compote.
