Vegetable Rice

Ingredients

  • 1 Medium Onion (diced)
  • 1 Pound Pumpkin (finely diced)
  • 2 Tablespoons Pimento/ Seasoning Peppers (finely diced)
  • 1 Tablespoon Margarine (or butter)
  • 2 1/2 Cups Rice
  • 4 Cubes MAGGI® Vegetable Flavoured Seasoning Cubes
  • 4 Cups Water

Instructions

  • 1.  Fry onions, squash and pimento/seasoning peppers in margarine until onions are translucent.
  • 2.  Add rice and Cubes and sauté until well incorporated.
  • 3.  Add water and bring to a boil. Reduce heat to a simmer and cover pot. Cook for 25 minutes.
  • 4.  Remove from heat and let stand for 5 minutes. Fluff with fork and serve hot.
