Ingredients

  • 2 Pounds Chicken parts
  • 2 Packs Maggi® Season-up! CHICKEN POWDERED SEASONING
  • 2 Tablespoons MAGGI® Green Seasoning Original
  • 1 Unit Onion
  • 1 Tablespoon Garlic (minced)
  • 1 Tablespoon Vegetable Oil
  • 2 Tablespoons Brown Sugar
  • 2 Cups Rice
  • 1 Cup Pumpkin (cut into cubes)
  • 1 Medium Carrot (peeled and diced)
  • 1 Can Pigeon Peas (drained)
  • 3 Cups Warm Water
  • 1 Pack MAGGI® Coconut Milk Powder (50g)
  • 1 Unit Hot Pepper

Instructions

  • 1.  Clean chicken and cut into small pieces. Season with Season Up, green seasoning, onion and garlic.
  • 2.  Heat oil in a large pot, add brown sugar. When sugar has caramelized, add chicken and stir to coat completely with
  • 3.  caramelized sugar.
  • 4.  Cover and cook chicken on medium high heat for 10 minutes.
  • 5.  Add rice, pumpkin, carrot and pigeon peas. Combine water and coconut milk powder and add to the pot. Top with hot pepper.
  • 6.  Bring to a boil, cover pot tightly and reduce heat to low. Cook for 20 minutes.
  • 7.  Remove hot pepper. Serve with Cole Slaw or Green Salad.
