Spicy Bean Stew

A spicy bean medley perfect for a vegetarian meal or meatless Monday

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1 Piece Garlic minced
  • 2 Tablespoons Escallion chopped
  • 1 Cup Sweet Pepper chopped
  • 2 Bean Medley cooked
  • 1 Cup Mixed Vegetables drained
  • 1 Packet MAGGI® Season-Up All Purpose
  • 1 Teaspoon Scotch Bonnet finely chopped
  • 1/4 Cup MAGGI® Liquid Coconut Milk

Instructions

  • 1.  Heat oil in a saucepan and add garlic, escallion and sweet pepper. Sauté for one minute.
  • 2.  Stir in beans, mixed vegetables, Season-Up All Purpose, Scotch Bonnet pepper and Liquid Coconut Milk into pot.
  • 3.  Reduce heat, cover the pot and simmer until sauce thickens. Remove from heat and serve.

Serving Tip

Serve with hot rice or hot roasted breadfruit.
