1 Unit Small Roasted Breadfruit
(diced and cut into ½ inch cubes)
1/3 Cup Parsley
(minced)
1 Teaspoon Black-pepper
1 Teaspoon Thyme

2 Cubes MAGGI® Onion and Garlic Cubes

9 Pieces Carrots
(cut into 1-inch cubes)
9 Pieces Broccoli Florets
1 Cube MAGGI® Vegetable Cube
(crumbled)
1 Tablespoon Olive Oil
1 Teaspoon Thyme

1 Teaspoon Oregano
Instructions
BBQ Sauce:
1. In a pot whisk 2 cinnamon sticks, ¼ cup brown rum, orange juice, 1 tablespoon MAGGI® Green Seasoning, 1 teaspoon paprika, 2 MAGGI® Onion & Garlic Cubes, 3 cups ketchup, 1 cup water, 1 teaspoon browning and ¼ cup brown sugar.
2. Over medium heat bring, to a boil, reduce heat to a simmer and cook for 10 minutes. Set aside.
Roast Pork:
3. Place pork on a clean cutting board and pat dry with a paper towels, make 1-inch-deep incisions all over the pork.
4. Combine 1 teaspoon ginger, 2 MAGGI® Onion & Garlic Cubes, 2 teaspoons MAGGI® Season Up All- Purpose , 1 teaspoon chives and marjoram in a small bowl. Rub into the pork on both sides and refrigerate overnight.
5. Preheat oven to 350°F (180˚C). In a roasting pan, pour water 1½ -2 cups insert wire rack into pan, and place marinated pork onto rack. Cover with foil and bake for 15-20 minutes.
6. Combine ¼ cup brown sugar, ¼ cup rum, 1 teaspoon lemon/lime juice, 1 teaspoon allspice, 1 teaspoon oregano and 1 teaspoon black pepper in a small bowl. Uncover pork and baste with this mixture continue to roast for 25-30 minutes until nicely browned and temperature reaches 356˚F (185°C) let rest then brush with prepared BBQ sauce. Set aside
Breadfruit Hash:
7. In a skillet, over medium heat combine 2 tablespoons olive oil and 2 tablespoons butter. Add diced red onion, sweet/bell peppers and 4 cloves minced garlic, sauté until fragrant.
8. Toss in roasted breadfruit stirring to incorporate and cook for 5 minutes. Add 1/3 cup parsley, 1 teaspoon black pepper, 1 teaspoon thyme and 2 MAGGI® Onion & Garlic Cubes. Set aside.
Charred Roasted Veg
9. In a baking dish combine carrots, & broccoli, MAGGI® Vegetable Cube, 1 tablespoon olive oil, 1 teaspoon thyme and 1 teaspoon oregano.
10. Broil ingredients for 3 minutes to char then place in preheated 350°F (180˚C) oven for 10 mins to finish cooking.
11. Put all food components on the plate and serve with BBQ sauce.
