Ingredients

  • 1 Tablespoon Vegetable Oil
  • 2 Tablespoons Curry Powder
  • 1/2 Cup Water
  • 3 Tablespoons Onion (diced)
  • 1 Teaspoon Garlic (minced)
  • 1 Tablespoon Pimento/ Seasoning Peppers (minced)
  • 1 1/2 Tablespoon Chadon Beni/Culantro (minced)
  • 1 Pack MAGGI® Coconut Milk Powder (50g) (dissolved in 2 cups warm water)
  • 1.5 Pounds Corn on the Cob (sliced into 1/2-inch pieces)
  • 3 Cubes MAGGI® Vegetable Flavoured Seasoning Cubes

Instructions

  • 1.  Heat oil in a medium pot. Mix 1/2 cup water and curry powder. Pour into hot oil and let cook for 2 minutes or until thick.
  • 2.  Add onion, garlic, pimento pepper and chadon beni to pot. Cook for 1 minute.
  • 3.  Add Coconut Milk and Vegetable Cubes and bring to a boil, add corn and cook for 30 minutes on medium/low heat.
  • 4.  Serve hot and enjoy!
