Coconut Vegetable Rice

Ingredients

  • 1 Tablespoon Coconut Oil
  • 1/2 Cup Carrots (diced)
  • 1/2 Cup Bodi (diced)
  • 1 Teaspoon Garlic (minced)
  • 1 Cup Parboiled Rice
  • 3/4 Cup MAGGI® Coconut Milk Powder (dissolved into 1 1/3 cup warm water)
  • 1 Cup Water
  • 3 Cubes MAGGI® Onion and Garlic Cubes (2-3)

Instructions

  • 1.  Heat the coconut oil in pot over medium high heat. Add the carrots and bodi. Cook for 1 minute. Add the garlic and cook a few seconds more.
  • 2.  Add the rice to the vegetables and mix well.
  • 3.  Add the Coconut Milk, water and Cubes. Bring to a boil and let simmer, covered, on low heat for 15 minutes; or until all the liquid is absorbed by the rice. Allow to steam for another 10 minutes covered, fluff and serve.

Different Veggies
