Ingredients
2 Ounces Unsalted Butter melted
3/4 Cup Brown Sugar
2 Tablespoons Honey
1/4 Cup Stout
1/4 Cup ORCHARD® 100% Pineapple Juice 1L Carton
1 1/2 Cup All Purpose Flour
1 1/2 Teaspoon Baking Powder
1/2 Teaspoon Mixed Spice for Baking
1/2 Teaspoon Cinnamon Powder
1 Unit Eggs
1/4 Cup Raisins, Seedless
1/4 Cup Currants, Zante, Dried
2 Cups Cherries, Sweet, Raw chopped
Instructions
1.
Combine melted butter, sugar, honey, stout and Orchard Pineapple Juice over low flame.
2.
Sift together flour, baking powder and spices. Add egg, melted mixture and dried fruit. Mix well.
3.
Bake in a 9 in. x 4 in. loaf tin on the centre shelf at 350 degrees for 45 minutes.
4.
Allow to cool completely before removing from pan. Serve with butter or cheese.
