Ingredients

  • 1 Medium Onion (sliced)
  • 6 Stems Chive
  • 1 Tablespoon Thyme
  • 4 Pieces Garlic
  • 1 Tablespoon Ginger
  • 1 Unit Scotch Bonnet
  • 1 1/2 Tablespoons Soy sauce
  • 1 Teaspoon Ground All Spice
  • 3 Units Whole Cloves
  • 1/4 Cup Vegetable Oil
  • 3 Pounds Chicken legs and thighs
  • 6 Teaspoons Maggi® Season-Up! Jerk ( 3 oks Maggi® Season-Up! Jerk (10g) )
  • 8 Ounces Beer

Instructions

  • 1.  In a blender, blend all of the ingredients except the MAGGI® Season-Up Jerk, chicken quarters and beer. Set aside.
  • 2.  In a bowl, place chicken quarters and pierce each piece multiple times with a small knife, to allow seasonings to penetrate the meat.
  • 3.  Add blended seasonings and MAGGI® Season-Up Jerk to the chicken ensuring that all pieces are coated evenly.
  • 4.  Marinate for a minimum of 2 hours (for best results marinate overnight).
  • 5.  Preheat oven to 350˚F (180˚C) and line a roasting pan with foil.
  • 6.  Place seasoned chicken onto rack in roasting pan, pour beer into the bottom of the pan and cover with foil.
  • 7.  Bake for 45 minutes, remove foil and broil until skin is crisp.
  • 8.  If using a grill, cook over a medium heat until chicken is completely cooked. Serve immediately.
