Ingredients
Portions: 6
- 6 Large Egg Yolk
- 3/4 Cup Granulated Sugar
- 2 Cups Nestle® KLIM® Fortificada
- 1 Cup Nestle® KLIM® Fortificada
- 1/2 Teaspoon Ground Nutmeg
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Ground Cinnamon

Instructions
Whisk the egg yolks
- 1.In a large bowl, whisk the egg yolks and sugar until the mixture becomes pale and slightly thickened. This gives the eggnog its silky texture.
Heat the milk mixture
- 2.In a saucepan, over medium heat, warm the milk, whole milk, nutmeg and cinnamon until it is hot but not boiling. You should see little wisps of steam.
Temper the eggs
- 3.Slowly pour a ladle of the hot milk mixture into the yolks while whisking continuously. This prevents the eggs from scrambling.
Combine & Thicken
- 4.-Pour the tempered yolk mixture back into the pot.
- 5.-Cook on medium-low heat, stirring constantly, until the mixture slightly thickens—about 5–7 minutes.
- 6.-Do NOT let it come to a boil.
Add Vanilla
- 7.Remove from heat and stir in vanilla extract.
- 8.If you’re making a spiked version, add your rum/bourbon/brandy now.
Chill completely
- 9.Pour the eggnog into a bottle and let it chill for at least 2–4 hours.
- 10.The flavours deepen as it rests.
- 11.Serve cold in your favourite holiday glass and you can enjoy it topped with whipped cream and a sprinkle of cinnamon/nutmeg.
