  • 6 Large Egg Yolk
  • 3/4 Cup Granulated Sugar
  • 2 Cups Nestle® KLIM® Fortificada
  • 1 Cup Nestle® KLIM® Fortificada
  • 1/2 Teaspoon Ground Nutmeg
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Ground Cinnamon

Instructions

Whisk the egg yolks

  • 1.In a large bowl, whisk the egg yolks and sugar until the mixture becomes pale and slightly thickened. This gives the eggnog its silky texture.

Heat the milk mixture

  • 2.In a saucepan, over medium heat, warm the milk, whole milk, nutmeg and cinnamon until it is hot but not boiling. You should see little wisps of steam.

Temper the eggs

  • 3.Slowly pour a ladle of the hot milk mixture into the yolks while whisking continuously. This prevents the eggs from scrambling.

Combine & Thicken

  • 4.-Pour the tempered yolk mixture back into the pot.
  • 5.-Cook on medium-low heat, stirring constantly, until the mixture slightly thickens—about 5–7 minutes.
  • 6.-Do NOT let it come to a boil.

Add Vanilla

  • 7.Remove from heat and stir in vanilla extract.
  • 8.If you’re making a spiked version, add your rum/bourbon/brandy now.

Chill completely

  • 9.Pour the eggnog into a bottle and let it chill for at least 2–4 hours.
  • 10.The flavours deepen as it rests.
  • 11.Serve cold in your favourite holiday glass and you can enjoy it topped with whipped cream and a sprinkle of cinnamon/nutmeg.
