1. Combine Coffee, paprika, brown sugar, dry mustard, Season Up All Purpose, black pepper, oregano, ginger and chili powder in a spice grinder or food processor until it becomes a well combined spice mix.
2. Pat steaks dry then apply a generous amount seasoning to each side ensuring that every inch of the steak is covered. Allow steaks to rest for 5 minutes.
3. In a cast iron skillet heat 1 tablespoon oil just before smoking point then place a steak in the skillet to create a sear.
4. Do Not move steak once it has been placed in hot skillet. Cook on medium high heat for 3 minutes on each side for medium steaks.
5. In the last two minutes of cooking, add 1 tablespoon of butter, 1 clove of garlic and 1 sprig of thyme to the skillet.
6. Remove from heat and allow to rest for 8 minutes. Repeat process for other steaks.
