1. On a baking tray, greased with pan spray, spread out black beans evenly. Bake in a preheated oven for 10 minutes.
2. In a sauté pan heat olive oil and sauté onion, garlic and escallions, until onions are translucent. Place in a large bowl or in a food processor with the remaining ingredients. Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture. Leaving large chunks of beans.
3. Form into patties about 1/3 cup of mixture in each.
4. Place patties on a lined baking sheet and bake at 375 degrees
5. In a sauté pan heat olive oil and sauté onion and garlic, until onions are translucent.
6. Add remaining ingredients. Cook for three (3) minutes, stirring occasionally.
