1. In mixing bowl, using potato masher or fork to mash bananas. Add eggs, sugar and vanilla.
2. In a separate bowl, combine flour, baking powder, salt and cinnamon.
3. Add banana mixture to flour mixture, then stir in NESTLE CARNATION Evaporated Milk.
4. In frying pan, place oil to cover the base of pan. Heat oil over medium heat until ripples begin to form.
5. Using a 2 ounce ice-cream scoop, pour fritter batter carefully in oil. Evenly space fritters, do not over crowd pan. Fry on both sides until golden brown. Transfer to a surface lined with absorbent paper to drain excess oil. Makes about 12 fritters. Recipe serves 6 persons.
