Ripe Banana Fritters

Ingredients

  • 3 Mediums Ripe Bananas
  • 1 Piece Eggs beaten
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Vanilla Essence
  • 2 Cups All-Purpose Flour
  • 1 Teaspoon Cinnamon Powder
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt, Table
  • 1/2 Cup CARNATION® Full Cream Evaporated Milk
  • 1/4 Cup Oil For Frying

Instructions

  • 1.  In mixing bowl, using potato masher or fork to mash bananas. Add eggs, sugar and vanilla.
  • 2.  In a separate bowl, combine flour, baking powder, salt and cinnamon.
  • 3.  Add banana mixture to flour mixture, then stir in NESTLE CARNATION Evaporated Milk.
  • 4.  In frying pan, place oil to cover the base of pan. Heat oil over medium heat until ripples begin to form.
  • 5.  Using a 2 ounce ice-cream scoop, pour fritter batter carefully in oil. Evenly space fritters, do not over crowd pan. Fry on both sides until golden brown. Transfer to a surface lined with absorbent paper to drain excess oil. Makes about 12 fritters. Recipe serves 6 persons.
