Hearty Breakfast Bread Pudding

Ingredients

  • 18 Slices Bread, Wheat Bran crusts removed, cut into 1-inch cubes
  • 1 Cup Smoked Ham diced
  • 2 Cups Cheese, Mexican Blend
  • 1/2 Cup Onion chopped
  • 1 Tablespoon Escallion chopped
  • 1/4 Cup Parsley chopped
  • 1 Tablespoon Butter, unsalted
  • 1 Cup Corn
  • 1 Cup Callaloo cooked
  • 6 Large Eggs
  • 2 1/2 Cups Nestlé® OMEGA Low Fat Milk 1L Carton
  • 2 Teaspoons MAGGI® Naturisimo Complete Seasoning
  • 1 Teaspoon Oil to grease pan

Instructions

  • 1.  In a non-stick frying pan, melt 1 tablespoon butter. Sauté onions until translucent, then add scallions and ham. Cook for 3 minutes stirring occasionally.
  • 2.  In a mixing bowl, toss together bread, parsley, sautéed onion mixture and 1 ½ cups of cheese. Whisk together in a separate bowl OMEGA Milk, eggs and MAGGI Naturisimo. Pour over bread mixture and combine well.
  • 3.  In a greased 9 inch bake dish greased with pan spray, pour mixture and spread evenly. Mixture can be made a day ahead and kept in the refrigerator. Sprinkle remaining cheese on the top of bread pudding mixture
  • 4.  Preheat the oven at 350 degrees F. Cover with foil. Bake for approximately 20 minutes. Uncover and bake for a further 30 minutes or until puffed and golden brown. Cut into 8 slices and serve.
