Ingredients

  • 0.5 Pound Butter
  • 3/4 Cup Granulated Sugar
  • 1/3 Cup NESTLÉ® Sweetened Condensed Milk (395g)
  • 1 Tablespoon Browning
  • 2 Teaspoons Vanilla Essence
  • 6 Units Eggs
  • 1 1/2 Cup All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 1 Tablespoon Mixed Spice for Baking
  • 2 1/2 Cups Red Label Wine
  • 3 1/2 Cups Mixed Fruits soaked and drained

Instructions

  • 1.  Preheat the oven to 350°F (180°C). Grease 2 9×5” and line with grease-proof paper.
  • 2.  Cream butter and sugar, by hand or using an electric mixer, until light and fluffy. Add Sweetened Condensed Milk and mix on low speed.
  • 3.  Add browning, vanilla, and eggs one at a time and mix on low until combined well.
  • 4.  In a separate bowl, combine all dry ingredients - flour, baking powder, salt, and mixed spices for baking.
  • 5.  Add dry ingredients in three parts alternating with one and a half cup of the red label wine. Fold in mixed fruits and pour batter equally into the prepared baking pans
  • 6.  Bake for 1 hour or until the knife comes out clean when placed in the centre. Add remaining 1 cup of red wine over the cake once finished and allow to rest.
