Caramel Apple Muffins

Ingredients

  • 2 Tablespoons Butter (or margarine)
  • 1/4 Cup All-Purpose Flour
  • 2 Tablespoons Granulated Sugar
  • 1/2 Teaspoon Cinnamon Powder
  • 1/2 Cup Walnuts (chopped)
  • 1 cup CARNATION® Full Cream Evaporated Milk
  • 1 Tablespoon Vinegar
  • 1/2 Cup Vegetable Oil
  • 1 Unit Eggs
  • 1 1/2 Cup Brown Sugar
  • 2 Teaspoons Vanilla Extract (or vanilla essence)
  • 2 1/2 Cups All-Purpose Flour
  • 2 1/2 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 2 Cups Apples (coarsely chopped, with or without skin)
  • 1/4 Cup Caramel Sauce

Instructions

Streusel Topping

  • 1.  In a medium bowl, mix 2 tablespoons butter, ¼ cup all-purpose flour, 2 tablespoons granulated sugar, ½ teaspoon cinnamon powder and ½ cup chopped walnuts for the streusel topping and set aside.

For Muffin Batter

  • 2.  In another bowl mix Evaporated Milk and vinegar and set aside for 5 minute to make buttermilk.
  • 3.  After 5 minutes, add oil, egg, brown sugar and vanilla essence to buttermilk mixture. Set aside.
  • 4.  In a large bowl mix flour, baking powder, salt and baking soda.
  • 5.  Pour buttermilk mixture into flour mixture to form muffin batter and gently fold in the chopped apples.
  • 6.  Pour batter into pre-lined muffin pans and top each muffin with streusel topping.
  • 7.  Bake in pre heated oven at 350°F (180°C) for 15-20 minutes or until golden brown.
  • 8.  Remove from oven and cool for 10 minutes before drizzling with caramel sauce.
