Ingredients

  • 2 Pounds Goat, Raw Head & Tripe, washed with vinegar water
  • 6 1/2 Cups Boiling Water , reserve 1/4 cup for dumpling
  • 1 Pack MAGGI® Soup It Up! Vegetable Soup Mix
  • 2 Cubes MAGGI® Vegetable Flavoured Seasoning Cubes
  • 1/2 Cup All-Purpose Flour
  • 1/2 Cup Yam, Raw peeled and cubed
  • 1/2 Cup Chayote, Fruit, Raw peeled and cut up
  • 1/2 Cup Carrots, Raw cut-up
  • 1 Unit Hot Pepper
  • 4 Sprigs Thyme

Instructions

  • 1.  Scald washed goat head and tripe in salted boiling water for 10 minutes. Discard the water and add 4 cups of water, and Vegetable Seasoning Cubes. Boil over medium heat for 60 minutes. Stirring occasionally.
  • 2.  While the meat is boiling, in a separate mixing bowl combine remaining ½ cup of water with flour and combine into a dough to make spinners.
  • 3.  Add prepared vegetables, Vegetable Soup Mix, and spinners to the soup and cook for an additionally 20 minutes.
  • 4.  Adjust seasoning and flavours if necessary and remove from the heat once all vegetables and meat have been cooked. Serve hot and enjoy!

A Pressure cooker may be used to reduce cooking time by half for goat meat
