Maggi Creamy Coconut Pumpkin Soup

Ingredients

  • 2 1/2 Liters Cold Water
  • 2 Pounds Pumpkin Peeled and Diced
  • 1 Cup Onion Sliced
  • 1/2 Cup Celery Chopped
  • 1/2 Cup Carrots Diced
  • 4 Pieces Garlic Crushed
  • 1 Piece Ginger
  • 1 Sprig Thyme
  • 1 Unit Scotch Bonnet
  • 2 Packets MAGGI® Soup it Up! Jamaican Cock Soup Mix with Pumpkin (50g)
  • 2 Packages MAGGI® Coconut Milk Powder (50g)

Instructions

  • 1.  In large sauce pan place water in pot along with pumpkin, onion, celery, carrots, garlic, ginger, thyme and scotch bonnet pepper. Bring to a boil. Simmer for 15 minutes or until pumpkin is cooked.
  • 2.  Carefully remove thyme sprig and scotch bonnet pepper. Using a hand held blender, puree liquid until smooth. Using a strainer, strain liquid.
  • 3.  Return to pot, add MAGGI PUMPKIN SOUP IT UP, stir until dissolved. Cook soup for 5 minutes.
  • 4.  Finish with MAGGI COCONUT MILK POWDER and cook for 5 minutes. Serve hot.
