Ingredients

  • 4 Pounds Chicken, broilers or fryers, breast, meat and skin, raw
  • 1 Cup Onion chopped
  • 2 Teaspoons Scotch Bonnet
  • 4 Pieces Garlic crushed
  • 2 Tablespoons MAGGI® Naturisimo Complete Seasoning
  • 4 Large Eggs beaten
  • 230 ounces CARNATION® Full Cream Evaporated Milk
  • 1 Cup All Purpose Flour
  • 2 Cups Barbecue Sauce
  • 1 Cup Oil For Frying

Instructions

  • 1.  Place onion, scotch bonnet pepper, garlic and 1/3 cup oil in a blender and process until smooth.
  • 2.  Pour blended mixture over the chicken along with MAGGI NATURISIMO and leave to marinate for 45 minutes.
  • 3.  Whisk together eggs and CARNATION FULL CREAM EVAPORATED MILK in a bowl.
  • 4.  Place flour in another bowl
  • 5.  In a large saucepan over medium heat, heat oil to approximately 375 degrees F.
  • 6.  Coat seasoned chicken in egg mixture then flour. Repeat in batches until all chicken is completely coated. Dust off excess flour.
  • 7.  Carefully place coated chicken in heated oil working in two batches. Fry chicken until golden brown.
  • 8.  Dip chicken in BBQ sauce, place on greased baking tray. Cook for 10 minutes in an oven preheated at 350 degrees F.
