Jerk Vegetables

A great way to enjoy a variety of vegetables as a meal offering for a vegetarian diet or as an accompaniment to your favorite protein dish

Ingredients

  • 2 Tablespoons MAGGI® Jerk Seasoning Mild
  • 0.5 Pound Chayote / Cho-Cho peeled and cubed
  • 6 Sticks Celery chopped
  • 0.5 Pound Eggplant diced
  • 2 Units Bell Peppers large diced, red and yellow
  • 2 Units Red Onion diced
  • 0.5 Pound Zucchini diced
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Italian Vinagrette

Instructions

  • 1.  Toss the vegetables in the Jerk Seasoning before threading onto skewers. Place each on the oiled and heated grill.
  • 2.  Allow each vegetable to cook on each side until complete, for 5 minutes.
  • 3.  Remove the skewers from the grill and dress with Italian Vinaigrette and serve. Great accompaniment to Coconut Jasmine Rice and Grilled Chicken.
