Trelawny Yellow Yam Salad

Ingredients

  • 8 Cups Water
  • 1 Cube MAGGI® Vegetable Flavoured Seasoning Cubes
  • 2 Pounds Yellow Yam peeled and diced in 1 inch cubes
  • 2 Teaspoons MAGGI® Naturisimo Complete Seasoning
  • 1/2 Cup Mayonnaise
  • 1/2 Tablespoon Granulated Sugar
  • 1 Teaspoon Cayenne pepper
  • 1/2 Cup Raisins, Seeded
  • 15 Ounces Mixed Vegetables
  • 1 Tablespoon Escallion chopped
  • 1 Tablespoon Parsley chopped

Instructions

  • 1.  In a pot bring to a boil water, add MAGGI VEGETABLE BOULLION stir to dissolve. Add yams to pot and cook until tender. Drain yams of all water and cool down in a refrigerator.
  • 2.  Combine together MAGGI NATURISIMO, mayonnaise, sugar, and cayenne pepper
  • 3.  In a mixing bowl toss together cooked yams, raisins mixed vegetables and scallion. Pour mayonnaise mixture over yam and incorporate nicely.
  • 4.  Garnish with chopped parsley and serve.
