1. Preheat oven to 350˚F (180˚C) and line a cookie sheet with parchment paper. Set aside.
2. In a double boiler, melt the semi-sweet chocolate with the butter. Stir constantly until melted. Set aside to cool.
3. With a stand/hand mixer, beat eggs, granulated sugar and NESCAFÉ® Classic Coffee on high speed for 3 minutes until thick.
4. Slowly, add the cooled melted chocolate mixture to egg mixture, mixing until just combined.
5. Sift flour, baking powder and salt into batter. Fold dark chocolate chunks into batter, stirring to incorporate.
6. Scoop 1-ounce portions onto the cookie sheet, spaced 2 inches apart and bake for 12-14 minutes. Cookies are ready when the tops are cracked and the edges are set.
7. Remove from the oven and cool on the rack for 2 minutes before removing to cool completely.
