Maggi Rice It Up Rice and Peas

Ingredients

  • 1 1/2 Cup Maggi Liquid Coconut Milk 1 1/2 cups
  • 2 Cups Water
  • 2 Cups Red Kidney Beans cooked, reserve 1/2 cup of liquid
  • 1/4 Cup Onion chopped
  • 1/4 Cup Escallion chopped
  • 1 Teaspoon Pimento
  • 2 Sprigs Thyme
  • 2 Pieces Garlic
  • 1 Piece Ginger crushed
  • 1 Unit Scotch Bonnet whole
  • 1 Packet MAGGI® Rice it Up Chinese Fried Rice Seasoning
  • 3 Cups Rice
  • 1/2 Tablespoon Unsalted Butter

Instructions

  • 1.  Add MAGGI LIQUID COCONUT MILK, reserved liquid from peas and water to a pot and allow to come to a boil.
  • 2.  Add peas, onion, scallion, pimento, thyme, garlic, ginger, pepper, allow to simmer. Add MAGGI CHINESE FRIED RICE IT UP to the pot along with the rice and butter.
  • 3.  Once liquid evaporates completely lower flame and cover with a tight lid.
  • 4.  Allow rice to cook for approximately 15 minutes or until tender.
