Ingredients
- 1 1/2 Cup Maggi Liquid Coconut Milk 1 1/2 cups
- 2 Cups Water
- 2 Cups Red Kidney Beans cooked, reserve 1/2 cup of liquid
- 1/4 Cup Onion chopped
- 1/4 Cup Escallion chopped
- 1 Teaspoon Pimento
- 2 Sprigs Thyme
- 2 Pieces Garlic
- 1 Piece Ginger crushed
- 1 Unit Scotch Bonnet whole
- 1 Packet MAGGI® Rice it Up Chinese Fried Rice Seasoning
- 3 Cups Rice
- 1/2 Tablespoon Unsalted Butter
Instructions

1. Add MAGGI LIQUID COCONUT MILK, reserved liquid from peas and water to a pot and allow to come to a boil.

2. Add peas, onion, scallion, pimento, thyme, garlic, ginger, pepper, allow to simmer. Add MAGGI CHINESE FRIED RICE IT UP to the pot along with the rice and butter.

3. Once liquid evaporates completely lower flame and cover with a tight lid.

4. Allow rice to cook for approximately 15 minutes or until tender.
