Ingredients
- 1 Tablespoon Escallion chopped
- 2 Tablespoons Onion chopped
- 1 Teaspoon Scotch Bonnet finely chopped
- 1 Cup All-Purpose Flour
- 1/4 Cup Cornmeal
- 1 Cup Cream Style Corn
- 1 Tablespoon Baking Powder
- 10 Grams Maggi® Season-Up!® All Purpose
- 1 Cup Water
- 1 Cup Vegetable Oil for frying
- 1/2 Cup Mayonnaise Dressing, No Cholesterol
- 1/2 Tablespoon MAGGI® Curry Powder
- 5 Grams Maggi® Season-Up!® All Purpose
Instructions

1. In a sauté pan, heat 1 tbsp. vegetable oil over medium heat. Sauté escallion, onions and scotch bonnet pepper until onions are translucent. Remove from heat and allow to cool.

2. In a mixing bowl, combine flour, cornmeal and baking powder. Add corn and water to make a pourable batter. Season batter with MAGGI ALL PURPOSE SEASONING.

3. In a deep frying pan, fill oil half way up the pan, heat oil over medium heat. Once oil is hot, use a tablespoon to pour batter into hot oil. Work in small batches to ensure oil temperature remains hot.

4. Fry until golden brown on both sides. Transfer to a baking tray lined with absorbent paper to drain excess oil.

5. For Curry Dip: In a mixing bowl combine all ingredients. Serve with Corn Fritters.
