Ingredients

  • 2 Tablespoons Margarine
  • 1 Medium Onion finely chopped
  • 3 Stalks Chive or escallion chopped
  • 1 Clove Garlic finely chopped
  • 1/4 Cup Red bell pepper chopped
  • 1 Pack MAGGI Coconut Milk Powder (50g) dissolved in 1 1/2 cups water
  • 1 2/3 Cups CARNATION Full Cream Evaporated Milk
  • 2 MAGGI Garlic Onion Bouillon Cubes
  • 1/4 Teaspoon Hot pepper /scotch bonnet finely chopped
  • 2 Cups Mixed vegetables
  • 1/4 Cup Canned Green beans
  • 1/4 Cup Canned Butter beans drained
  • 1/4 Cup Canned Red Kidney bean drained
  • 1/4 Cup Saltfish, boiled flaked
  • 2 Cups Cornmeal
  • 1 Cup Water

Instructions

    1. n a medium sauce pan, melt butter; add all the fresh seasoning, stir in the salt fish (cod fish) and the mixed vegetables

    2. Pour the dissolved Coconut Milk and EvaporatedMilk into the pot. Add the Bouillon cubes and hot pepper, bring to a boil

    3. Using a wooden spoon, gradually stir in the cornmeal a little at a time, and then add the peas.

    4. Reduce the heat and cover the pot, allow to steam for ten minutes, remove from heat and scoop into a casserole dish, cover with foil and allow to sit for another five minutes. Slice and serve as desired.
