Three Bean Chilli

Ingredients

  • 1 tbsp. Vegetable oil
  • 1 cup Diced onion
  • 4 cloves Garlic, minced
  • 1 tbsp. Finely chopped pimento / seasoning peppers
  • 2 tsps. Chilli powder
  • 1 tsp. each Cumin (geera), Paprika and Chilli / pepper flakes
  • 1 cup Diced pumpkin
  • 1 Sweet pepper, diced
  • 1 Carrot, grated
  • 1 tin Diced tomatoes
  • 2 MAGGI Vegetable Bouillon Cubes dissolved in 2 cups water
  • 1 tin Red beans, drained
  • 1 tin Black beans, drained
  • 1 tin Pinto beans, drained
  • 1 cup Whole kernel corn
  • 1 tbsp. Finely chopped Chadon Beni / Cilantro (optional)

Instructions

    1. In hot oil, sauté onions, garlic, pimento peppers.

    2. Add Chilli powder, Cumin, Paprika and Chilli flakes. Cook for 2 minutes.

    3. Add pumpkin, sweet pepper, carrots and diced tomatoes. Cook for 3 minutes.

    4. Add Vegetable Bouillon broth and beans.

    5. Bring to a boil then reduce heat to a simmer. Simmer for 20 minutes stirring occasionally.

    6. Add corn and continue to cook for 5 minutes.

    7. Before serving, sprinkle with Chadon beni.
