Ingredients

  • 1 tbsp. Vegetable oil
  • 1 med. Onion, chopped
  • 1 tsp. Curry powder
  • 1 tbsp. Hot pepper, finely chopped
  • 4 medium Tomatoes, chopped
  • 2 cans Chick peas, drained
  • 1 tbsp. Lime juice
  • ¼ cup Raisins
  • 2 medium Apples, cored, and diced
  • 2 MAGGI Vegetable Bouillon Cubes
  • 1 cup Three bean salad, drained
  • ¼ cup Carrots, shredded
  • 4 tbsps. Chive / escallion, finely chopped

Instructions

  1. Heat oil in a saucepan and sauté onions until translucent.

  2. Add curry powder and cook for 2-3 minutes.

  3. Add the remaining ingredients except for the carrots and chive /escallion.

  4. Continue cooking for 1-2 minutes stirring frequently.

  5. Toss in carrots and stir for 1 minute.

  6. End by tossing in chive / escallion.

  7. Serve hot or cold.
