Orange and Cranberries Muffins

  • 1/3 cup Butter
  • ½ cup Granulated sugar
  • 1 Egg
  • ¾ cup TOTAL Bran Cereal
  • 1 tsp. Orange zest
  • ½ cup ORCHARD Orange Juice or Orange Juice
  • ¼ cup CARNATION Evaporated Milk
  • 1 ¾ cup Flour
  • 2 tsps. Baking powder
  • ¼ tsp. Baking soda
  • ¼ tsp. Salt
  • ½ cup Dried cranberries or dried fruit of choice


  1. Cream butter and sugar with electric mixer until pale yellow and fluffy.

  2. Add egg, Cereal, orange zest, Orange Juice and Evaporated Milk.

  3. In a medium bowl, sift flour, baking powder, baking soda and salt.

  4. Add flour mixture to butter mixture, stirring just to moisten ingredients.

  5. Fold in cranberries.

  6. Fill greased muffin tin with batter 2/3 full.

  7. Bake in preheated oven at 400°F for 25 – 30 minutes or until golden brown
