  • 1 Medium onion, finely chopped
  • 1 tbsp. Minced garlic
  • 3 Pimento peppers, finely chopped (optional)
  • 1 tbsp. butter
  • 2 tbsp. Olive oil
  • 1 tbsp. Tomato paste
  • 2 tins Stewed tomatoes with herbs (blended)
  • 1 pk. (10g) Maggi Season-up, All Purpose
  • 1 tbsp. Each of fresh parsley, chadon beni (cilantro), basil, thyme and celery
  • 1 tsp. Black pepper
  • 1 cup Black / green olives with pits
  • 1 Maggi Chicken Tomato Bouillon Tablet
  • 8 Chicken parts


    1. In a large skillet, sauté onions, garlic, pimentos and celery in olive oil and butter on a medium-high heat until tender.

    2. Add tomato paste and combine thoroughly.

    3. Pour in blended stewed tomatoes and reduce heat to medium low.

    4. Add Season Up, fresh herbs, black pepper, olives and Chicken Tomato Bouillon Tablet.

    5. Cover and simmer for 15 minutes.

    6. Add chicken making sure to cover with sauce.

    7. Simmer on medium-low heat for 40 minutes, or until chicken becomes tender and pulls away from bones easily.
